SMIDDY LOAF RECIPE
4oz Margarine
1 cup of Water
1 cup of Caster Sugar
1 tsp Bicarbonate of Soda
1 tsp Mixed Spice
8oz Self Raising Flour
8oz Sultanas
2 eggs

Method
Measure water, margarine, sugar, spice, bicarbonate of soda and sultanas and heat gently in a pan. Do not boil.
Simmer until margarine has melted.
Set aside until cold then add the beaten eggs and sifted flour.
Grease and line a 2lb loaf tin and bake for approximately 1¼ hours. 350°F/180°C/Gas 4 |
